Abstract
Populacija djece u vrtićkoj dobi je vrlo delikatna, te je njihova sigurnost u svim aspektima na prvom mjestu. Tjelesna, zdravstvena i emocionalna sigurnost jedni su od najvažnijih elemenata boravka djeteta u vrtiću. Praktična primjena načela HACCP sustava za dječje vrtiće obuhvaća dugogodišnju praksu i iskustva zdravstvenih voditeljica dječjih vrtića u načinu definiranja kritičnih kontrolnih točaka, preduvjetnih uvjeta i postupaka, te definiranja načina praćenja i vođenja evidencije. Ovaj rad obuhvaća sve elemente kontrole, samokontrole, prevencije i samim time smanjenje rizika potencijalnih opasnosti u procesu pripreme hrane.
Abstract (english)
The kindergarten population is very delicate and their safety comes first, in all aspects. Physical, health and emotional safety are some of the most important elements of a child's daycare. Practical application of the HACCP principle for kindergartens includes many years of practice and experience of kindergarten health leaders in defining critical control points, prerequisites and procedures, and defining how to monitor and keep records. This work covers all the elements of control, self- control, prevention and thereby reducing the risk of potential hazards in the food preparation process.
