Abstract
Tema ovog rada je HACCP u poslovnicama Kauflanda. U svrhu boljeg razumijevanja teme razrađeno je zakonodavstvo u području sigurnosti hrane, te preduvjetni programi koji se moraju zadovoljiti. Objašnjen je pojam trgovine na malo kao i pojam upravljanja kvalitetom u trgovini na malo, a dan je prikaz trendova trgovine na malo u RH. Pružen je uvid u praktični primjer primjene HACCP sustava i to kroz poslovnice Kauflanda. Upoznaje se i s tvrtkom Kaufland, te ekološkim standardima koja koriste u svom poslovanju.
Abstract (english)
The topic of this paper is HACCP in Kaufland retail shops. In order to better understand the topic, legislation in the field of food safety has been developed, as well as preconditions that must be done. The concept of retail trade as well as the concept of quality management in retail trade are explained, and an overview of retail trade trends in the Republic of Croatia is given. An insight into a practical example of the application of the HACCP system was provided through Kaufland retail shops. We are acquainted with the company Kaufland, and the environmental standards they use in their business.
